In my house we love beef! In fact, I remember my grandpa cooking the most amazing beef recipes when I was a child! Yep, that's right, my grandpa David was an amazing cook and I always loved his chuck short ribs with mashed potatoes. In fact, I am sure grandpa would love this Instant Pot Beef Short Ribs recipe if he were still around today!
This delicious pressure cooker beef ribs recipe is super easy to cook and is a real favourite of mine. I'm sure you will love it too! Enjoy!

What Cut is beef short ribs?
Short ribs are a cut of beef taken from the brisket, chuck, plate or rib areas of cows. Beef short ribs are best cooked in a slow cooker or Instant pot to allow the meat to become tender.
Cooking beef Short Ribs
Cooking beef short ribs has never been easier. In fact this super simple Instant pot beef recipe would be great for a dinner date and is a fantastic alternative to Instant pot steak.

Ingredients needed for this BEEF SHORT RIBS INSTANT POT RECIPE
- 2.5 – 3 pounds boneless beef short ribs
- 1 teaspoon salt
- ½ teaspoon pepper
- 3 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1/3 cup cooking sherry or Worcester sauce.
- 28-30 ounces beef broth
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- Yellow small potatoes, skin on, washed & dried
- Sprig of fresh thyme or rosemary

HOW TO COOK BEEF SHORT RIBS
Salt and pepper the boneless short ribs.

Add oil and set pressure cooker to Sauté – High.
Sear short ribs for 3-4 minutes on each side or until seared. (This will need to be done in batches so you don't overcrowd the cooker)

Add minced garlic and heat for about a minute.

Deglaze the insert by adding the sherry and scraping the bottom with a wooden spoon.

Add the ribs back to the cooker.
Add beef broth, seasonings, sprig of fresh thyme or rosemary, and potatoes.

Close and lock lid.
Set pressure cooker to Pressure Cook – High. And set timer for 30 minutes.
Allow to natural release for 15 minutes, then manually release any extra pressure.

Once pressure is gone and silver valve has released, open cooker.

Smash potatoes slightly and plate.
